Fresh Spring Pasta Salad
Serves 4
Ingredients
- 250g chickpea spiral pasta (I used San Remo) 
- 2 handfuls of baby spinach 
- handful of cherry tomatoes cut in half 
- 1 small red capsicum thinly sliced 
- 1 medium cucumber thinly sliced 
- 1/2 red onion thinly sliced 
- 1/2 block of feta cheese (slice into cubes or crumble into the pasta) 
- 1 tbsp. olive oil 
- 1 tbsp. lemon juice 
- 2 tsp. minced garlic 
- Optional: extra protein - smoked salmon or poached shredded chicken would work really well in this recipe 
Method
- Prepare the pasta following the packet instructions. Once cooked, drain water and let the pasta cool on the side 
- Prepare sliced vegetables into a large bowl 
- Once pasta has cooled slightly, add to the vegetables and combine well 
- Add oil, lemon and minced garlic. Mix well. 
- Add the sliced or feta cheese and mix through the salad 
- If adding extra protein, add this on the side or mix through the salad well 
- Serve and enjoy! This meal can be served as a side to a main meal or on its own since the chickpea pasta has a higher protein content than other pasta’s.
