Super Simple Tofu Coconut Rice Stir Fry
Serves 4
Ingredients
- 450g Firm tofu 
- 2 tsp. olive oil 
- 1 tbsp. Sesame oil 
- 1 tbsp. Soy sauce 
- 2 tsp. minced garlic 
- sprinkle of chilli flakes 
- 2-3 cups frozen stir fry vegetables 
- 4 handfuls of baby spinach 
- 1x 250g basmati coconut rice 
Method
- Drain the tofu and slice into small cubes 
- Heat a medium pan with olive oil and minced garlic 
- Add the tofu pieces, cooking for about 3-5-minutes 
- Add stir fry vegetables to the pan and combine with the tofu - cook for a further 5-minutes 
- Add the soy sauce, sesame oil and chilli flakes 
- Once flavours are combined into the mix of vegetables and tofu, you can choose to add the rice to the pan for a further 2-minutes or microwave the rice as per instructions and serve separately with the tofu, vegetables & spinach.
