Festive Inspired Side Salad
Ingredients
- 2 cups brussel sprouts - chopped thinly 
- 1x bunch of radish - chopped thinly 
- 1/2 cup slivered almonds 
- 1x small fennel sliced 
- 2 tbsp. lemon juice 
- 1 tbsp. avocado/olive oil 
- 1 tsp. minced garlic 
- pinches of chopped mint 
On the side: Greek yoghurt with a dash of lemon juice and mint for people to drizzle as they desire on the salad
Method
- Chop and slice all vegetable ingredients and toss in a large salad bowl 
- Add lemon juice, olive/avocado oil, minced garlic and chopped mint to the salad and toss to combine well 
- Sprinkle the slivered almonds across the top of the salad 
- Add the side of yoghurt dip or drizzle lightly across the top of the salad 
- Enjoy alongside any roast of choice and add some crispy baked potatoes or bread for some balance!
