Australia Day BBQ Dukkah Prawns & Mango Salsa Salad

Ingredients
Prawn Skewers
- 1kg of uncooked large king prawns 
- 2 tbsp. of pistachio dukkah (I use the table of plenty brand available at Woolworths & Coles) 
- 2 tbsp. olive oil 
- 1 tbsp. lemon juice 
- 2 tsp. minced garlic 
- salt and pepper to your tasting 
- Greek yoghurt 
Mango Salsa Salad
- 1x large mango finely diced 
- 1/2 red onion finely diced (optional) 
- 1x medium carrot finely chopped 
- 1 large tomato finely diced 
- 1 cucumber finely diced 
- 2 tbsp. lime juice 
- handful of chopped mint leaves 
Method
To prepare the prawns, peel and clean well. In a large bowl combine olive oil, dukkah, lemon juice and minced garlic. Add prawns and mix and coat well. Thread the prawns onto your skewers, about 3-4 prawns per skewer. Heat the prawns on a BBQ plate until they change colour and are cooked through.
To prepare the mango salsa salad finely dice all ingredients. Toss together in a bowl with lime juice and chopped mint leaves. Serve on the side of the prawn skewers for the perfect flavour balance!
